I am writing now is not that I "never" tabletop ice maker seen anyone use them. But overall it's so rare to see people sitting with a Surface tabletop ice maker (Pro), and when they use them so I have only seen them use them as it was a ultrabook and not as a tablet.

Your observation seems to be supported by market observations for the corporate segment in the U.S., where Windows laptops falls from a market share of 42.9% to 34.1%, while Windows tablets increases from 0.8% to 2.2%.
A decrease of almost 9 percentage points of laptops and an increase of 1.4 says nothing about a possible. cannibalization.
